Hello amiga-os of the internet, I woke up this morning with a little extra time before heading out to yoga and I didn’t feel like having toast or my usual oatmeal with fruits breakie. I wanted to try something new and play around with texture and taste. In fact I really wanted pancakes, and since I didnt have any mixture , I decided to make my own. And it was surprisingly ugly to look at, but you know how they often say not to judge a book by it’s cover, well they’re not completely wrong, because it was actually very delightful and that’s why I will share with you the recipe. You’ll probably laugh at how easy it is, but here we go! ( I should start a ” cooking easy things with veronica ” series, ha!)
I used ;
- 1/2 cup of raw buckwheat purridge (alternative to oatmeal )
- 1/2 cup of almond milk
- 2 ripped bananas
- 1 big table spoon of chia seeds
- dried raisins
You smash it all in a big bowl until it becomes smooth, then you pour small portions on a non sticky hot pan, (option to put vegan butter on the pan or coconut oil , but I used none)Then you just have to be extra careful and turn them so that they don’t burn or stick to the pan. Then just add any syrup you have, I poured some agave syrup on top, and there you have it! Yummy, healthy, easy to make ”pancakes” for you to enjoy on a sunday morning.
